## A Glimpse into Emirati Coffee Heritage
The aroma of cloves and roasted beans once filled the majlis of Sheikh Zayed bin Sultan Al Nahyan, the UAE's Founding Father. This week, the same gahwa recipe is being shared at the ADIHEX exhibition in Abu Dhabi by The Founder's Office.
## The Symbolism of Gahwa
Gahwa, brewed in a dallah, is a symbol of Emirati hospitality and identity. Its significance is recognized internationally, having been added to UNESCO's Intangible Cultural Heritage list in 2015. The tradition involves serving coffee in small cups called finjan, a gesture of welcome.
## The Ritual of Serving
In the majlis, gahwa is served with specific customs. The coffee is poured with the right hand, starting with the most honored guest. The cup is never filled to the top, inviting guests to stay longer. A slight tilt of the cup signals the guest has had enough.
## Preserving a Legacy
The Founder's Office has documented Sheikh Zayed's coffee recipe, drawing from historical sources and testimonies of those who served him. This effort aims to preserve the cultural and personal significance of gahwa in his majlis, reflecting values of generosity and dialogue.
